Zucchini Rolls

Method

Sauté the onion and carrot in vegetable oil. Set aside half of the cooked vegetables to mix into the filling, and we'll use the other half for the sauce later.

Slice your zucchini into long, thin strips — a vegetable peeler works beautifully for this. Just run it down all sides of the zucchini.

Combine the ground meat, rice, half of your sautéed onion and carrot mixture, salt, and pepper. Place a spoonful of filling on a zucchini strip (or use two strips overlapping for stability) and roll it up. Arrange the rolls seam-side down in your baking dish.

Mix together the tomato sauce and sour cream with the remaining sautéed vegetables, season with your choice of spices and a pinch of salt, then pour it over the rolls.

Bake in a preheated 350°F (180°C) oven for about 45–50 minutes.
