Zucchini Rolls

Method

Sauté the onion and carrot in sunflower oil. Add half of the cooked vegetables to the meat mixture, and we'll use the other half for the sauce later.

Slice the zucchini into long thin strips—a vegetable peeler works great for this. Peel strips from all sides of the zucchini.

Mix the meat, rice, half of the sautéed onion and carrot, salt, and pepper. Wrap the filling in zucchini strips (I use two strips overlapping). Arrange the rolls in a baking dish.

Combine the tomato sauce with sour cream, the remaining cooked vegetables, spices, and salt. Pour over the rolls.

Bake in a preheated 350°F oven for about 45–50 minutes.
