Zucchini "Mock Mushrooms"

Method

It's best to use mature zucchini rather than young ones so the flesh is firm. If there is soft pith, remove it and use it for another dish—keep only the firm parts of the zucchini. Cut them into 1 cm thick slices, making them look somewhat like sliced mushrooms.

Toss the zucchini with all the ingredients listed above and let them marinate for 3 hours.

After 3 hours, pack the mixture into sterilized jars.

Process the filled jars in hot water: 5 minutes for half-liter jars.

Seal tightly.

Let them cool upside down. Do not wrap them up.
