Method

Slice them into thin rounds, season with salt, and let sit for 45–60 minutes. Then squeeze thoroughly and drain off the released liquid.

Finely grate the cheese. Set aside 2–3 tablespoons for the top layer. To the remaining cheese, add the starch, ground pepper, and nutmeg, and mix well.

Arrange the zucchini rounds in a baking dish in layers, scattering the prepared cheese mixture between each layer. Pour in the cream evenly.

Combine the reserved cheese with breadcrumbs and sprinkle over the top of the dish. Dot the surface with small pieces of butter.

Bake in an oven preheated to 175–180°C for 40–50 minutes, until the top is golden and crispy.
