Method

Peel the zucchini and remove the seeds, then chop and pass them through a meat grinder along with the onions.

In a large pot, whisk together the vegetable oil, lemon juice, mustard, salt, and 30 g of sugar.

Add the minced zucchini and onions along with the tomato paste. Stir well and simmer over medium heat for 1 hour, stirring occasionally.

Next, stir in the remaining sugar, add the bay leaf and black pepper, and cook for another 30 minutes.

Blend the caviar with an immersion blender until smooth, bring it back to a boil, stir well, and remove from the heat.

Pack the hot caviar into sterilized jars, seal tightly with lids, wrap in a blanket, and let cool completely.
