An unusual and aromatic homemade preserve made with zucchini, bananas, and sugar, which makes a fantastic companion to tea during the colder months.

Method
Peel the zucchini, scoop out the seeds, and chop into cubes up to an inch and a half in size.
Peel the bananas and slice them into pieces of roughly the same size.
Place the zucchini and bananas in a heavy-bottomed pot, add the sugar, stir well, and let sit for two hours so the zucchini releases its juices.
Set the pot over low heat and simmer for forty minutes, stirring regularly.
Sterilize your jars and lids.
Ladle the hot jam into the sterile jars, seal them tightly, turn upside down, and wrap in a blanket until completely cooled.
Store in a cool pantry for up to a year.
