Method

Wash the vegetables and apple. Seed the pepper, peel the zucchini and remove seeds if needed, peel the apple and remove the core.

Run the zucchini, pepper, apple, and garlic through a meat grinder. Add tomato paste, mix well, and transfer to a pot.

Add oil, salt, and sugar. Simmer over low heat for 40–50 minutes, stirring occasionally.

Stir in the vinegar and ground chili, then cook for another 10–15 minutes.

Let the adjika cool, then transfer to clean glass jars.
