Method

Cut the zucchini into pieces and process with a blender or meat grinder until smooth.

Pour the vegetable oil into a heavy-bottomed pot, add the pureed zucchini along with the salt, sugar, and hot red pepper.

Stir well and simmer over low heat, stirring constantly, for 30 minutes uncovered.

Add the tomato paste and cook for another 30 minutes, continuing to stir constantly.

Stir in the dried basil, blue fenugreek, and vinegar, mix thoroughly, and simmer for an additional 10 minutes.

Immediately pack the hot adjika into sterilized jars right up to the brim, seal with clean lids, and wrap in a blanket until completely cooled.
