Method

Process the zucchini, bell peppers, and hot peppers through a meat grinder.

Transfer the vegetable mixture to a pot, and add the oil, sugar, and salt. Bring to a boil and simmer for 35–40 minutes, stirring occasionally.

Stir in the tomato paste, minced garlic, and vinegar essence. Cook for another 10–15 minutes.

If you prefer it spicier, add a little ground red pepper.

Ladle the hot ajika into sterilized jars, process in a boiling water bath for 10 minutes, and seal tightly with lids immediately.
