Method

Combine the semolina, kefir, and sugar. Mix until the sugar dissolves and the semolina swells, then let it sit for 30 minutes.

Next, add the baking soda, oil, salt, and 1 cup of flour, mixing everything well.

Divide the batter in half.

Stir the cocoa (or carob) into one half, and the remaining 2 tablespoons of flour into the other. Mix both portions thoroughly.

Grease a 20–24 cm baking pan with butter. Drop the batter into the center, 2 tablespoons at a time, alternating between the dark and light batters.

Create a pattern using a toothpick: first draw from the center to the edges, then from the edges to the center.

Bake in a preheated oven at 180 °C (350 °F) for 35–45 minutes.
