Method
Wash the potatoes.
Cut the garlic head in half lengthwise.
Put the potatoes, bay leaf, and peppercorns in a pot and cover with cold water by about an inch. Season with salt.
Bring to a boil, then reduce the heat.
Simmer gently until the potatoes are tender when pierced with a knife.
Drain the water and remove the bay leaf and peppercorns. Let the potatoes dry out a bit in the pot.
Add butter pieces and toss everything together by shaking the pot.
Finish with fresh chopped herbs when serving.
