Method

Mix together the butter, sour cream (or matzoon), egg, salt, and baking soda (or baking powder), then gradually add the flour to form a non-sticky dough.

Divide the dough into two balls, cover with plastic wrap, and chill in the refrigerator.

For the filling (khoriz), rub the clarified butter with powdered sugar and vanilla until crumbly, add the flour, and work it thoroughly until crumbly. Optionally, add chopped walnuts.

Roll the dough out into a 5 mm thick layer, add the filling, roll it up into a log, flatten slightly, and cut with a pastry wheel.

Brush with egg yolk and bake at 180 degrees Celsius until golden brown.
