Method
Dissolve the yeast in warm milk, add the sugar, and mix in 6 tablespoons of flour.
Stir well, cover, and let rise in a warm spot for 30 minutes.
Whisk the eggs with the salt and fold them into the sponge.
Gradually incorporate the remaining flour, pour in the oil, and knead into a soft dough that doesn't stick to your hands.
Lightly oil your work surface (skip the flour!), turn out the dough, cover with a towel, and let proof for 30 minutes.
While it rises, prep your filling.
Divide into portions, shape your pies, and let rest for 15 minutes.
Proceed according to your recipe: if baking, brush the tops with egg yolk or strong brewed tea.
