Method

Make the sponge: combine flour, sugar, yeast, and warm water. Stir well and let sit in a warm spot for 30 minutes.

Add salt and flour to the sponge and knead into a dough. Work in the oil until soft and elastic, then cover and proof in a warm place for an hour.

For the filling, boil the potatoes and buckwheat. Sauté finely chopped onions in oil. Combine the mashed potatoes, cooked buckwheat, onions, salt, and pepper into a uniform mixture.

Divide the dough into two portions: one-third and two-thirds. Roll out the larger piece, transfer it to a parchment-lined baking dish, and press it up the sides to form a crust.

Spread the filling evenly over the dough base.

Roll out the remaining dough, place it over the filling, and crimp the edges to seal. Prick the top all over with a fork.

Bake in the oven at 340 °F (170 °C) for 40 minutes.
