Method

Wash all your vegetables. Dice the peppers, tomatoes, cucumbers, and onion; grate the carrots; mince the garlic. Toss everything into a large bowl.

Break the cabbage into florets, blanch in boiling water for 3 minutes, then drain and add to the other vegetables.

Season the vegetables with 2 tablespoons of salt, mix well, and let sit for an hour.

In a separate pot, combine all the pickling liquid ingredients (salt and the rest), bring to a boil over heat.

Pour the hot pickling liquid over the vegetables.

Set the bowl of pickled vegetables over heat, bring to a boil, and simmer for 5–7 minutes.

Pack the hot salad into sterilized jars, seal them, turn upside down, and wrap in a blanket until completely cooled.
