Method

Whip the eggs with the sugar until pale and fluffy (3 to 4 minutes). Separately, melt the chocolate with the butter and let it cool slightly. Gently fold the chocolate mixture into the eggs and mix to combine.

Sift together the flour, cocoa powder, and baking powder, add them to the mixture, and stir until a smooth batter forms. Divide the batter into 4 portions and spread each onto a 24 cm circle of parchment paper. Bake each layer at 180°C (350°F) for 5 to 7 minutes.

For the frosting, whip the cream cheese, cold heavy cream, and sugar (or powdered sugar) until stiff peaks form (3 to 4 minutes). Transfer the frosting to a piping bag fitted with a round tip.

Assemble the cake by piping the frosting between the sponge layers. Refrigerate for at least overnight to set.

Melt the chocolate with the butter and decorate the cake with drips. Optionally, garnish with freeze-dried raspberries.
