Whole Roasted Trout

Method
Rinse the whole fish inside and out, then pat dry with paper towels.
Score the skin on both sides with 3–4 shallow cuts. This helps the fish absorb flavors and cook evenly.
Season the trout generously with salt and pepper inside and out.
Slice half a lemon into thin rounds. Stuff the cavity with 2–3 lemon slices and sprigs of rosemary or thyme.
Lay the trout on a piece of foil, then arrange the remaining lemon slices on top. Wrap the foil tightly, making sure there are no gaps.
Roast at 180–190 °C for about 30–35 minutes.
After 30 minutes, carefully unwrap the foil and pierce the thickest part of the fish with a knife. If the juices run clear and the flesh flakes easily, it's done. If they're still slightly pink, bake for another 5–7 minutes.
