Method

Melt the butter in a small saucepan over medium heat. It is preferable to use a light-colored pan so you can better monitor the color while cooking.

Stir frequently as the butter slowly simmers, then bubbles, and finally foams on the top layer.

You will notice the color changing from yellow to golden-yellow and brown with specks of caramelized milk solids. As soon as it turns dark brown and develops a sweet, nutty aroma, immediately remove it from the heat. The whole process takes about 10 minutes.

Fill a large bowl with ice, then place a smaller bowl on top. Pour the brown butter (including all the brown bits) into the smaller bowl and use a hand mixer to whip the butter until light and fluffy.

You can store it in an airtight container, spread it on bread, or use it in cooking.
