Method
Prepare 1 kg of peeled watermelon rinds.
Cover the rinds with water (3 cups) and add baking soda.
Simmer the rinds with the soda until softened.
Drain the water and rinse the rinds.
Add granulated sugar (1 kg), lemon zest, and whole cloves.
Cook the jam over medium heat until thick and amber-colored.
At the end of cooking, stir in the citric acid (1/4 tsp).
Ladle the finished jam into sterilized jars.
