Method

Grate the zucchini on a box grater, salt it, and let it sit for 5 minutes. Then squeeze out the excess liquid really well.

Grate the carrots on a box grater. Mix the zucchini, carrots, eggs, and all your dry ingredients together. Season to taste and mix thoroughly.

Line a baking sheet with parchment paper and spread the vegetable mixture evenly in a layer about 1 cm thick. Sprinkle with some of the cheese.

Bake in a preheated 350°F oven for about 25 minutes until golden brown.

Once the base is ready, top it with ham, the remaining cheese, tomato, or whatever filling you like, then fold it up like in the video.

Pop it back in the oven for about 5 minutes so the cheese melts.
