Vanilla Panna Cotta with Strawberries

Dissolve the gelatin in water and let it bloom for about 20 minutes, then heat until fully dissolved (do not boil).

In a heavy-bottomed saucepan, combine the cream, sweetener, vanilla, and lemon juice, and mix well. Warm the mixture to 40°C.

Add the bloomed gelatin and stir until combined.

Pour into molds and refrigerate for 2-3 hours to set.

Dissolve the gelatin in water and let it bloom for about 20 minutes, then heat until fully dissolved (do not boil).

Chop 100g of the berries, place them in a saucepan, add water and sweetener (to taste), and simmer for 1.5-2 minutes.

Let it cool slightly, strain the syrup, add the bloomed gelatin, and stir.

Finely dice the remaining 100g of strawberries.

Unmold the set panna cotta, place the diced strawberries on top, and pour the jelly over them.

Return to the refrigerator for 2 hours to set.
