Method

Rinse the currants thoroughly and let them drain.

Pack the berries into two sterilized half-liter jars.

Place the jars in a pot lined with a kitchen towel, cover with boiled lids, pour in warm water up to the shoulders of the jars, and heat without bringing to a boil—the berries will begin to settle.

Once the berries have settled by half, transfer the contents of one jar into the other to fill it up, cover with the lid again, and pasteurize for 10–15 minutes.

Seal the jar tightly, wrap it in a warm blanket, and let it cool completely.

Store at room temperature.
