Method

Put water and sugar on the heat and wait for the mixture to turn amber — usually takes about 7 to 10 minutes. Keep the heat low and watch it constantly, or it'll burn on you.

Once the mixture starts boiling, warm up your cream in a separate pan, but don't let it boil.

When the caramel hits that beautiful amber color, add the butter and salt, stir it together, then pour in the hot cream in a thin stream.

You can take it off the heat now, but if you want a thicker, more pulled-taffy kind of consistency, let it cook for another 6 minutes or so on low heat.
