Method

Cook the rice in water, bring to a boil, then simmer over low heat for 30–40 minutes until the grains are completely tender.

In a large bowl, whisk together the yogurt, egg, flour, and salt.

Slowly add the hot rice and its cooking water to the yogurt mixture one ladle at a time, stirring well after each addition.

Transfer the soup to a pot and bring to a gentle simmer over medium heat. Cook for 15 minutes, stirring occasionally.

In a small skillet, melt the butter and quickly toast the mint in it for about 30 seconds.

Pour the mint butter into the finished soup and stir to combine.
