Method

Stir the baking soda, salt, and sugar into the kefir. Add the melted butter, then the flour, and knead into a soft dough. Let it rest for 20 minutes.

Mash the potatoes, add butter, and season with salt and pepper.

Fold the chopped green onions and grated feta into the mashed potatoes.

Divide the dough into 4 portions and let them rest for 5 minutes. Roll each portion out into a thin oval and transfer to parchment paper.

Place the filling down the center, then bring the edges of the dough together to form boat shapes.

Brush the pastries with egg yolk and bake at 200 °C (392 °F) for 25 minutes.
