Cut the turkey fillet into evenly sized strips. Season with salt, a drizzle of vegetable oil, and bake in the oven at 160°C (320°F) for 10-15 minutes until fully cooked.

In a skillet, sauté finely chopped onion, then add minced garlic and grated ginger.

Whisk together the Tom Yum paste, heavy cream, coconut milk, and soy sauce until well combined.

Add the cooked turkey to the onions, stir, and pour in the prepared sauce. Season with sugar, salt, and pepper to taste, and mix well. Bring to a boil, then simmer over medium heat, stirring occasionally, for another 5-7 minutes.

Stir in the chopped green onions at the very end, and adjust the salt if needed.
