Method

Boil the potatoes for 8–10 minutes. Let them cool slightly and slice into rounds.

Slice the onions into half-rings or quarter-rings. Flake the tuna with a fork.

Coarsely grate the cheese. Zest the lemon finely, using about 1–2 teaspoons. Press the garlic through a crusher.

Grease a baking dish with oil. Arrange half of the potatoes in the dish. Add the onion and fish, one-third of the cheese, and top with the remaining potatoes. Sprinkle with rosemary.

Whisk the heavy cream with the lemon zest, garlic, and salt. Pour into the dish. Top with the remaining cheese.

Bake the gratin in a preheated oven at 200 °C (400 °F) for about 25–30 minutes.
