Method

Whisk together the flour, salt, and baking powder, then rub in the butter until crumbly.

Stir in the sour cream and knead into a soft dough.

Divide the dough into 18 portions, shape into balls, and cover to rest.

Combine the ground meat, onion, salt, black pepper, and paprika for the filling.

Roll the dough out into a thin circle, make a slit, add the filling, and shape into samsa.

Brush with egg yolk, sprinkle with poppy seeds, and bake at 180°C (350°F) for 35 minutes.
