Method
Finely dice the yellow onion and slice the leek into thin rounds, then sauté in a mix of olive oil and butter until softened.
Add the minced garlic and sliced button mushrooms, cooking until all the moisture has completely evaporated.
Stir in the flour and cook briefly, then pour in the milk and cream, season with salt and pepper, and bring to a simmer.
Cut the fish into large cubes and fold into the sauce along with the chopped fresh herbs, simmering for 5-7 minutes.
Boil the potatoes until tender, mash them, and mix in the butter and egg yolk until smooth.
Transfer the fish filling into a baking dish, top with the mashed potatoes, and bake for 10-12 minutes at 195°C (385°F).
