Method

Process the quark in a food processor or with an immersion blender until smooth.

Cream together the softened butter, powdered sugar, and vanilla paste until fluffy, then fold it into the quark and mix well.

Add the sour cream and incorporate it fully into the mixture.

Stir in the citrus zest, poppy seeds, candied fruits, and nuts (feel free to customize the mix-ins to your liking). Gently fold in the melted chocolate.

Line a pascha mold with a double layer of cheesecloth and transfer the mixture into it. Fold the edges of the cheesecloth over the top and place a weight on it (such as a bowl filled with water).

Chill in the refrigerator for 18-24 hours, allowing as much whey to drain as possible.

Unmold the pascha and carefully peel away the cheesecloth. Garnish the top with melted chocolate, toppers, and any festive Easter decorations!
