Traditional Bulgarian Letcho
A classic Bulgarian letcho featuring bell peppers, tomatoes, and onions. This aromatic preserve is perfect for the winter pantry and is always one of the first jars to go.

Method
Core the bell peppers and cut them into strips or wedges.
Process the tomatoes through a meat grinder or juicer to yield about 2 kg of tomato juice.
Slice the onions into thin strips. Heat the oil in a large pot, add the onions, and sauté for 10–15 minutes until translucent.
Pour in the tomato juice and bring to a boil. Add the peppers, salt, and sugar.
Once it returns to a boil, cover and simmer for 20 minutes.
Stir in the vinegar 5 minutes before it's done.
Pack the hot letcho into sterilized jars, seal tightly, turn upside down, and wrap in a blanket until completely cooled.
