Method
Blanch the bones, cover with water, and bring to a boil for 10 minutes. Drain and rinse the bones thoroughly — this removes impurities and any off-flavors.
Cover the bones with fresh water, add the onion, garlic, and ginger. Simmer hard over medium-high heat for 5 to 8 hours, stirring occasionally. The broth should turn creamy, pale, and deeply flavored.
Soft-boil the eggs for 6 to 7 minutes, cool them down, and peel. You can marinate them in a mix of soy sauce and water for 1 to 2 hours if you like.
Cook the noodles separately according to the package directions.
Pour the hot broth into a bowl, add the noodles, meat, egg halves, and whatever toppings you're craving.
