Tomatoes with Cabbage

Method

Slice the cabbage into thin shreds. Cut the pepper into fine matchsticks, and grate the carrot using a Korean-style grater. Toss everything together.

On the bottom of a sterilized jar, layer the dill, parsley, bay leaf, garlic, and pepper.

Pack in alternating layers: tomatoes (pricked), the vegetable mixture, then tomatoes again—fill right to the top of the jar.

Pour boiling water over, cover with lids, and let sit for 20 minutes.

Drain the water and add salt, sugar, and vinegar to the jar.

Bring the drained water back to a boil and pour it back into the jar.

Seal tightly, flip the jar upside down, and wrap it up to cool completely.
