Method

Wash the tomatoes and apples. Quarter the apples and remove the stems and cores.

In a clean jar, add the dill, parsley, peppercorns, and allspice berries. Sprinkle in the cinnamon.

Fill the jar with tomatoes, layering them with apple quarters and finishing with a bit of fresh herbs on top.

Bring water to a boil, pour it over the vegetables, cover with the lid, and let it sit for 15 minutes.

Pour the water into a pot, add the sugar and salt, bring to a boil, stir in the vinegar, then pour the hot brine over the tomatoes and apples.

Seal immediately, flip the jar upside down, wrap it in a towel, and let it cool completely.

Store at room temperature.
