Method

Wash the tomatoes and apples. Quarter the apples and remove the stems and cores.

In a clean jar, layer the dill, parsley, peppercorns, and allspice berries, then sprinkle in the cinnamon.

Pack the jar with tomatoes, interspersing with apple pieces and finishing with a bit of fresh herbs on top.

Bring water to a boil, pour it over the vegetables, cover with a lid, and let sit for 15 minutes.

Pour off the water into a pot, add sugar and salt, bring to a boil, stir in the vinegar, then pour the hot brine back over the tomatoes and apples.

Seal the jars immediately, flip them upside down, wrap them in a towel, and let cool completely.

Store at room temperature.
