Method

Sort through the strawberries, hull them, and rinse.

Cover the strawberries with sugar.

Set over low heat, cooking gently while stirring occasionally and skimming off any foam.

After 15 minutes, the berries will release their juices; continue simmering over low heat until the syrup thickens.

Drain off some of the liquid if necessary.

The jam is ready when a drop placed on a saucer forms a skin.

Sterilize the jars over steam, then ladle the hot jam into the jars up to the shoulders.

Seal with boiled lids, turn upside down, and let cool completely.

Store in a cool place.
