Method
Sort through the strawberries, hull them, and rinse.
Cover the berries with sugar.
Set over low heat and cook, stirring occasionally and skimming off the foam.
After 15 minutes, the berries will release their juices; continue simmering over low heat, reducing the syrup until thickened, draining off some liquid if necessary.
The jam is done when a drop placed on a saucer forms a skin.
Sterilize the jars over steam, ladle the hot jam into the jars, filling them up to the shoulders.
Seal tightly with boiled lids, turn upside down, and let cool completely.
Store in a cool place.
