Method
Whisk together all your dressing ingredients.
Cut the bread into bite-sized pieces, season with salt and pepper, then toss with a splash of olive oil.
Toast in a preheated 375°F oven for about 10–12 minutes until golden and crispy.
Cut the tomatoes into rough chunks, halve the cherry tomatoes, slice the cucumber, and thinly slice the onion. Toss everything into a mixing bowl.
Add olives if you like, mince in some garlic, pour over the dressing, and scatter the croutons on top. Fresh basil would be lovely here too.
Let it sit for 5 minutes, then dig in ♥️
