Slice the potato with a knife, but not all the way through—use wooden skewers or chopsticks to help guide your cuts. Brush with oil, season with salt and pepper, then into the oven at 400°F for about 30 minutes.

For the sauce, mix tomato paste, ketchup, and fresh basil or thyme. Once the potato is tender, tuck sausage slices into the cuts, pour the sauce over top, sprinkle with cheese, and bake for another 10 minutes.
