Husk the strawberries and cut each berry into about 8 to 10 pieces.

Finely chop the garlic, hot pepper, and cilantro. If you prefer less heat, remove the seeds from the pepper.

Place the strawberries, garlic, hot pepper, tamarind paste, palm sugar, and fish sauce into a small saucepan. Bring to a boil, reduce the heat, and simmer, stirring occasionally, for about 30 minutes until it reaches a thick sauce consistency.

Add the lime juice and cilantro, and simmer for another few minutes.

Taste and adjust the flavor balance if needed: add a bit more sugar for extra sweetness, a bit more lime for acidity, or a bit more chili if you like it spicier.
