Method
Cut the chicken breast into large cubes. Mince the garlic and coriander root into a paste.
Combine the garlic, coriander, fish sauce, soy sauce, sugar, white pepper, and vegetable oil. Add the chicken, mix thoroughly, and let marinate for at least 1 hour, or ideally 3 to 4 hours.
Soak wooden skewers in cold water for 20 to 30 minutes. Then, thread the chicken pieces tightly onto the skewers.
Cook the skewers on a grill, electric grill, or grill pan for 4 to 5 minutes on each side until fully cooked through. Baste the meat periodically with the leftover marinade while cooking.
Serve hot. Traditionally, Gai Ping is served with sticky rice and fresh vegetables, along with a spicy Thai dipping sauce if desired.
