Method
Heat oil in a skillet over medium-high heat. Fry the eggs one at a time until the whites are golden and crispy, keeping the yolk runny or medium-cooked. Transfer to paper towels.
Cut the tomatoes into large wedges and slice the onion into thin half-moons. Roughly chop the scallions and cilantro.
For the dressing, whisk together lime juice, fish sauce, sugar, and finely minced chili. Stir until the sugar dissolves completely.
Toss the vegetables and herbs together, pour the dressing over, and gently mix.
Divide the salad among plates and top with the fried eggs. Lightly break the yolks before serving so they can mingle with the dressing.
