Method

Dissolve baking soda in the kefir and let it sit for 5 minutes. Combine with flour, salt, and melted butter. Knead into a soft dough and let it rest covered with a towel for 20 minutes.

Dice the beef finely. Dice the potatoes and onions as well, then mix everything together with salt, pepper, and butter.

Divide the dough into 16 equal portions, roll each into a circle, place the filling in the center, and shape the pie, leaving a small opening at the top.

Transfer the pies to a baking sheet and brush with beaten egg. Bake in an oven preheated to 180°C (350°F) for 35 minutes.

For the broth, bring water to a boil with butter and salt. Pour a little broth through the opening in each pie. Return to the oven and bake for another 15 minutes.
