Method

Wash, slice, and boil the potatoes until tender. If using new potatoes, you can leave the skin on.

Finely dice the onion, garlic, and bacon.

In a preheated skillet, sauté the garlic, onion, and bacon over medium heat to prevent burning.

Slice the brie cheese.

In a baking dish, layer the potatoes and bacon, pour over the cream, and top with the cheese. Bake in a preheated oven at 180–200 °C (350–400 °F) for 15 minutes or until golden brown.
