Method

Rinse the chickpeas and boil them in plenty of water until tender. It is best to soak them overnight in advance.

Cut the sweet potato, boil until tender, and blend in a food processor with salt, warm coconut milk, and lime juice.

Add the chickpeas, cilantro, nuts, garlic, lime juice, olive oil, and tahini to the puree—blend until smooth and creamy.

Sauté the shrimp for 1-2 minutes. Dip the rice paper into hot oil for 1-2 seconds so it puffs up instantly.

Serve: plate the hummus, top with shrimp, cilantro, chili, and nuts. Serve with crispy rice chips on the side.
