Method

Wash the beets, tomatoes, peppers, and carrots. Peel the onions and carrots, and remove the seeds from the peppers.

Grate the tomatoes on a box grater without the skin or pass them through a juicer, then bring the tomato mixture to a simmer.

Finely chop all the remaining vegetables using a box grater or knife: grate the carrots and beets, julienne the peppers, and mince the onions.

Add the prepared vegetables to the tomato mixture, pour in the oil, add salt and sugar, bring to a boil, and simmer covered for 1 hour.

Pour in the vinegar and continue cooking for another 15 minutes.

Sterilize the jars and boil the lids.

Transfer the finished svekольnik into the jars along with the liquid, seal them, flip upside down, and let cool completely. Store in a cool place.
