Method

Cook the rice, then stir in the rice vinegar and honey or syrup. Let it cool.

Dice the fish and vegetables into small, neat cubes of roughly the same size.

Assemble the layers in a mold lined with plastic wrap: salmon, rice, a layer of cream cheese, a sheet of nori, the cucumber and avocado filling, rice again, and repeat the cheese and nori layers once more.

Press down gently on each layer with a spoon or spatula to ensure the shape holds firm and clean.

Cover with plastic wrap and chill in the refrigerator for at least three hours, though overnight is best.

Once chilled, carefully invert onto a serving platter, remove the wrap, and garnish the top with sesame seeds.

Serve with your favorite soy sauce.
