Method

Rinse the rice thoroughly and cook until done. Stir in the vinegar, mix well, and let it cool.

Dice the salmon and cucumbers (or avocado) into small cubes.

Line a mold with plastic wrap, leaving enough overhang on the sides.

Layer the ingredients: salmon, rice, cream cheese, a sheet of nori, more salmon, cucumber or avocado, rice, cream cheese, and another sheet of nori.

Press down firmly on each layer—this is essential for clean slicing later.

Wrap the cake in the plastic wrap and chill in the refrigerator for at least 30 minutes.

Invert the finished sushi cake onto a serving plate, remove the plastic wrap, and garnish with sesame seeds before serving.
