Method

Sift the flour into a bowl to aerate it.

Stir the dry yeast into the flour and mix well.

Grate the cold butter directly into the flour using a box grater.

Using your fingertips, work the flour and butter together until you get fine breadcrumbs.

Whisk the eggs with sugar until fluffy and pale, then add the egg mixture to the prepared dough and knead it together.

Let the dough rest for about 10-15 minutes to let it relax a bit.

Roll out a portion of the dough into a circle, spread with jam or preserves to your taste, leaving the edges dry, then cut into wedges—large or small, however you prefer.

Now shape each wedge into a crescent and place on a flour-dusted baking sheet.

Bake at 350°F for about 15-20 minutes.
