Method

Wash the tomatoes, remove the stems, and slice them into segments about 1 cm thick.

Arrange on the dehydrator trays, season lightly with salt and pepper, and dry at 50°C for about 12 hours until they shrink by half and become pliable.

Sterilize the jar and lid, then dry completely.

Layer the dried tomatoes in the jar, alternating with finely chopped dill and thin slices of garlic.

Warm the olive oil without bringing it to a boil, pour it over the tomatoes until they're completely covered, then add wine vinegar.

Let cool completely and store in the refrigerator.
